I thought hard on this and this is the recipe i'll start with:
"Mustard Maple butter glazed Cornish game Hens"
4 nice size hens flattened
1/4 cup of maple syrup
1/4 cup of dijon or grainy mustard
1/4 cup 0f butter
2 teaspoons of rosemary
1 teaspoon of sage
4cloves of garlic
2 teaspoons of lemon juice
Always wash any fowl thoroughly,removing any excess fat or skin. I've played around with this one and the family loves it!! Mix all the ingredients together in a saucepan at medium heat . You just want the butter to melt and mix in with the other ingredients after maybe 6 minutes take sacepan off heat and let mixture cool. After it has gotten cool
rub mixture allover gamehens and put in a glass non reactive bowls and wrap with plactic wrap.try not to put all the glaze on because your going to need some for basting later. I always suggest that you leave chicken in the fridge for at least 4 hours but of course overninght is even better. If your using propane(yuk) set fire to medium and grill accordingly shold take 15-30 minutes. If your using charcoal(good-boy) set charcoal to one side till the coals are white. and to really make it the best i suggest throwing some hickory,maple,apple, or cherry wood chips on the coals. cover and let smoke for 30 minutes then grill and baste your gonna love me after this one!!!!
